Bell peppers stuffed with cheese, sun-dried tomatoes and basil

Ricotta, mozzarella, basil, garlic, olive oil...is not it a lovely and comfort food? Oh yes, i've forgotten about baked bell peppers:)




















Ingredients:
4 large bell peppers;
475 gr ricotta cheese;
300 gr. mozzarella (chopped);
4-6 sun-dried tomatoes (chopped);
1-2 garlic cloves (finely chopped);
bunch of green basil (chopped);
Olive oil;
Salt (optional)


Cut the peppers in half lengthwise and remove the seeds and white cores. Bake in a preheated oven, 190-200C, for 15 minutes, until softer. Meanwhile, in a bowl  mix the ricotta, the mozzarella, the tomatoes, the garlic, the basil (reserve a little). Add some olive oil and mix well. Season with salt (optional). Stuff the peppers with the cheese mixture and arrange them in a baking dish. Drizzle over some olive oil and return in the oven, 180-190, for 20 minutes. Remove from the oven, then garnish with basil.
